Maui Banana Bread Recipe
(Found in a blog post on a Maui botanical garden website about 6 or 7 years ago)
Ingredients
150g Flour
198g Sugar
1/2 tsp salt
1 tsp baking soda
3 small very ripe bananas
92g vegetable shortening
2 eggs
Directions
Sift together flour, sugar, salt, and baking soda. Set aside.
Blend together bananas, shortening, and eggs.
Fold flour mixture into blended ingredients. Don't overmix.
Spoon into greased 9x9x2 inch pan. Thump once to remove bubbles.
Bake at 350 degrees for 40 to 45 minutes. Check after 30 minutes as cooking time may be much shorter depending on your oven.
Cool, and cut into squares, or eat straight from pan to face.
